TV CHEF PHIL VICKERY'S FAMILY FEASTS: Sweet potato & refried bean tortilla - mexican restaurant refried beans side dish

Just back from Mexico, I have to have a recipe for fried beans somewhere here.
I just like the texture and taste they add to a dish.
You can do it yourself, but it can take a long time to soak and cook, so I usually buy cans.
4 Serving ONION1 small red onion, very thin 6 tablespoons cider vinegar Salt and freshly ground black pepper for sweet potatoes 4 tablespoons any oil red onion, chopped small 2 small sweet potatoes (roughly 400g)
Peeled and chopped 10g vegetable reserve cube4 tbsp chopped fresh leather service 4 large wheat tortillas 200g refrigerated beans (canned is fine)
Small, ripe avocado, chopped iceberg or lettuce with long leaves.
If you don't have time to prepare sweet potatoes, you can use the same weight of a frozen cube cooked directly from the refrigerator.
