It is said that in the Ming Dynasty of China, the Emperor had hundreds of kitchen servants who could do whatever he wanted, occasionally, a night runner will be sent to the Forbidden City to eat a bowl of Lao Wang's spicy beef noodles.
Like many professional chefs, Wang has done only one job.
Even today, in the world of everyday Asian diets, experts-
The person who makes dumplings in his shop, the humble grgriller, or the old man who eats sweet black glutinous rice. -
The person who inspires the desire of Midnight
Now, the Vietnamese population in the Los Angeles area is deeply rooted, and traditional experts are starting to flourish here.
With the help of a Vietnamese friend, I managed to find some of the best places.
Although the dishes prepared by these restaurants may be found in other restaurants --
The destination restaurant, they were never as good as the version made by experts.
For example, the branch of Ba Le, especially Reseda, in banh mi--
Vietnamese submarine sandwich
French colonists in Saigon are looking for some of their own delicacies, they train a group of charcutiers and they continue to develop their own crosses
Pie, ham and sausage with culture.
They made these into French baguette with mayonnaise and Vietnamese dishes.
Pickled vegetables.
You can find the banh mi logo in Little Saigon in Orange County and Chinatown in downtown Los Angeles, such as Saigon Sandwich in Garden Grove.
But Basil's "combo sandwich" is the best introduction to this delicacy.
In addition to a wide variety of meats, the rich filling makes it the most luxurious banh mi in the world.

Every region of Vietnam has its own unique cooking style and special noodle soup.
In the ancient capital of central Vietnam, soup is as spicy and delicate as ordinary dishes.
Ngu Binh fast food is a small deli specializing in bun bo Hue, which is a special soup of Hue.
Tomatoes and Chile
The soup with pork and beef is perfect.
The store ordered bread (
Round Rice line)
It is noodles made in a local factory, fresh every day.
Each large steaming bowl comes with a traditional "salad" of fresh herbs and bean sprouts ".
The connoisseurs of the dish came to Ngu Binh because they could drink the soup with very fresh blood pudding and chewy beef tendon.
If you feel like you want to try these traditional add-ons, go to bun bo gan huyt.
You are more likely to want samples of fruit mixer drinks in a restaurant called sinh--
They are completely with bun bo Hue.
The taste of the drink changes every day: one day it may be jack fruit;
In addition, sashimi lychee;
Or maybe sambutier. -
They are all tropical fruits.
Don't be intimidated by everyone-Vietnam menu-
Just a suggestion to consult the server.

Especially in the small Saigon area.
There are many branches in Pho Hoa and Pho 79, both in Chinatown, Alhambra and Reseda.
There are also 86 River powder, Po Yue and 999 River powder 54, just to name a few.
The most interesting thing about the new pho crop is Pho Cali, a beautiful modern restaurant with good ventilation inside

Because Apple pie is American, beef balls are Vietnamese.
Bach Ngo and Gloria Zimmerman say that in classic Vietnamese cuisine.
"Although there are many meatballs stores in Vietnam, Bowen (beef balls)
Most of the restaurants in the area are factoryMade and frozenAt Bo Vo Vien--
Probably the only meatball store in California. -
Beef balls are made fresh by hand every day.
These are not the same as the pasta or submarine sandwiches you have eaten.
Their lean meat is as thin as the meat sauce and chewy in texture.
Let them eat a large bowl of fresh, flat Chinese egg noodles and a rich beef soup covered with herbs in Mibo Wien.
Decorate the soup with black Chinese vinegar and dip the ball into the seafood sauce on the table or the hot Vietnamese Chilean sauce.
Bo Vo Vien also has a small one
The most popular menu in Vietnam, such as shredded shrimp baked with sugar cane and Nimon, marinated juicy kebabs, chopped lean pork.

If you 've ever had fresh rice noodles in a dim sum meal-
Those rolled around the filling and doused with black vinegar ---
You will recognize the origin of banhe Kohn, Vietnam.
These pure steamed rice slices are thinner, more refined and less greasy than their Chinese relatives.
Tay Ho is a small cafe with two branches, specializing in banh cuon.
Here, the rice slices are steamed on muslin drums without oil, not like non-
Professional places are easy to do.
The result is the most elegant banh cuon, and Tay Ho offers them a variety of services.
They can be considered Asian burritos when they are stuffed.
One of the most attractive versions for Americans is banh cuon nhan thit (6)
Wrapped in tender fried minced meat and crispy fungus called the ear of the tree.
Other versions are filled or cut into strips with dried shrimp and coated with Cai lua (
Cold Vietnamese sausage)
Or roast pork.
Housing assembly board (1)
I think this is the best introduction to banh cuon.
Including a piece of meat. and a shrimp-
Fill in the meal form;
A light and deep sample of banh congFried rice cakes;
There is also a meatloaf called Tom Keane.
Decorate the whole thing with trivia of all kinds of vegetables and meat.

Vietnam has a coastline of 1,400 miles, many rivers and a large delta.
Of course, all kinds of fish and seafood are the staple food.
Most of Vietnam
Seafood restaurant I have been to in our area, mainly Chinese foodstyle dishes.
Grand Garden is an exception that offers more Vietnamese dishes
Than the style of fish dishes I see elsewhere.
Most of them are listed on the menu under "home specials and soups.
"Try the fresh catfish hot pot, where large, mild fish floats in fruit with tomatoes and pineapples --
Luo wangzi sour soup (191);
Stewed eel with coconut milk;
Crispy fried frog legs;
Or shrimp cooked in a pottery jar.

The common sight on the counters of many Vietnamese delicatessens and snack bars is beef jerky.
It can be placed on a green papaya salad, Four Seasons rice, or simply chewed as a snack.
I think until I found the "beef jerky Palace", there was only one type of beef jerky in Vietnam.
But there are seven kinds of dry, wet, soft meat in the deli in this shop.
Their rich soil colors range from deep, dusty och to blackest red.
The top of the counter is neatly arranged with a row of dishes full of samples, inviting you to taste.
Including spicy beef, sweet pork, sweet beef, fruit-
Seasoned beef and spicy beef nuggets. Chinese-
Ham and sauces were also made in a small factory behind the store.
Poko "dry Palace" at 9651 Bosa Avenue ". , Westminster; (714)531-7788. Open 10 a. m. -8 p. m. daily.
Hien Khanh is like an old-
Vintage ice cream shop: customers on the cooked iron table stir their cream iced drinks for a long timehandled spoons.
Two service counters with pastel deep pots-
The colorful dessert ingredients make up the first half of the cafe.
Although these jars look like a bucket of ice cream, you will soon find that the contents are not like ice cream in any way.
One of my favorite desserts is car food.
Like many of the products here, it is warm and layered: first, the colorful green tapioca silk, then the cooked banana slices mixed with the small tapioca pearl, and finally, everything is topped with sweet cream coconut milk.
Although there are the same desserts elsewhere, many Vietnamese come here specially.
Desserts are made live and serve fresh food at perfect temperatures and are not too sweet.
My favorite of cold desserts is tache che dau xanh.
The menu is described as jelly, mung bean paste and coconut, which may sound too strange for many Westerners.
It's unique, I admit, but when you stir sweet soybean sand into thick creamy coconut milk and crystal clear roots, it's as good as any exotic sundae
There are many other options, such as a tapioca ball floating mung beans in sweet coconut milk, which can keep you away from the temptation of dessert.

In Vietnamese restaurants, it is not uncommon to find one or two goat dishes.
However, the restaurants of hue and Hong Liandu mainly operate goats.
You can stew roast goats or goats in hot pot, or use a series of fragrant leaves, sweet goat sour salad
Egg tarts and, of course, tender lamb.
The owner of each place is almost always ready to introduce you to the creation of the kitchen.
For example, they explained the curry goats (
Flesh with skin and bone)
Steamed goats with curry sauce are more expensive (
Made strictly of lean meat)--
There are both places.
Great Curry.
Soak in spicy coconut milk and sprinkle with fresh herbs, fresh paprika and roasted peanuts.
The two restaurants also serve grilled pigeons with salads, chips or Sesame dishes.
Broken rice cookies.

The huge new Asian Garden Mall is a great place to see a variety of snacks and fast food under one roof.
This is also the best place to try sinh--
A foam mixture of rice, fruit and milk.
Nuoc Huong offers the largest variety of drinks I can find anywhere.
The taste includes cam (orange)and dau (strawberry)
For those who tend to be conservative.

If you want to have a little dessert with your sinh, go across the street to Van's Bakery, where you will find a wide variety of sweets.
Western Baroque style
French birthday cake
The style dessert shares the display space with classic Chinese pastries and Vietnamese baked and steamed sweets.
Banana leaves of Banh gai are covered with a rice noodle steamed cake filled with mung bean paste and coconut silk.
Banana leaves in Banh tet chuoi are filled with glutinous rice filled with sweet bananas.
I like the bananas here best, banh chuoi, a rich bread pudding with a layer of ripe fruit.
Both Banh dau zanh and banh khoai mi are tortes (
Mung bean and cassava, respectively);
Cut into wedges and look exactly like the rich butter cake in the West.
However, they are perfectly chewy in Southeast Asia.
