We bring you the most tempting recipes, plus some of the delicious dishes of judge Rosemary zlegel, to serve 4 portions of grilled eggplant sauce for fried beans. Preheat the oven to 200 °c/fan 180 °c
Put the eggplant in the baking jar and add 2 garlic cloves, the rest is complete, not peeled, and thyme.
Season with salt and pepper and apply everything in the oil.
Bake in the oven 30-
For 40 minutes, turn every once in a while until it becomes soft and yellow.
When baking eggplant, make the fried beans.
Heat the oil in the pan with medium fire.
Stir-fry with onion 5-
10 minutes until it starts to turn yellow.
Add garlic and chopped peppers and cook for another minute.
Add dried beans, coriander stems and coriander sauce. Cook for 10-
12 minutes more than the season
To finish the grilled eggplant, heat a little oil in the pan with medium heat, fry the onion for about 5 minutes or until translucent.
Peel and crush the remaining 3 garlic cloves and add them to the pan.
Fry for another 2 minutes before adding chopped tomatoes, red peppers, sugar, tomato sauce and soy sauce.
Boil, season, and simmer to reduce about the third time.
Add coriander sauce, lime juice and coriander stems to bring back to the boil.
Finally, add the roasted eggplant and coriander leaves and check the seasoning.
Mix all the salsa ingredients together and put them aside.
To make gorditas, mix masa harina, salt and baking powder in a bowl.
Take a well in the middle and add water slowly until you have a viable dough.
The shape is 8 pieces, each rolled in 10 cm laps.
Heat the oil with a non-stick frying pan and fry it in batches for 2-
3 minutes, turn halfway through cooking time until golden brown.
Drain for kitchen paper.
Stir the coriander leaves and parsley through the refrigerated beans and then eat them with gauditas, eggplant sauce and salsa sauce.
