A British expat in Texas is trying to introduce Americans to the fun of traditional British desserts. on 2008, Oprah Winfrey's magazine, O.
This popular publication boldly describes the mixture of sponge, chopped dates and toffee sauce as "the sexiest British work since"actor]Colin Firth".
It's no surprise that Tracy's sticky toffee pudding company has increased its sales through its website and the U. S. premium supermarket chain Whole Food Market, a major retailer.
Good for pudding, four years ago Tracy started selling on a folding table at the Farmers Market in Austin, Texas.
Tracy, who is in her 50 s, moved from the UK to Texas in 2003, starting a national and career change.
Today, her business earns $4 m a year (£3m)
Including Costco and Wal-Mart (Wal-Mart.
Before immigrating to the United States, Tracy worked as a language therapist at a British hospital for seven years.
But she wanted to do something else in her own life, and was keen on Bakers since she was a child, and decided to venture and focus on sticky toffee pudding.
Inspired by the re-popularity of the British dish at the time, but given that the British market is saturated, she hopes to win the support of Americans.
Thanks to getting the required green card in the early days of the United States, she was able to live and work in the United States, and in 2004 she founded her sticky toffee pudding company in Austin's basement.
She will appear at the Texas farmers market, with sticky toffee puddings based on her mother's recipes, as well as other homemade British desserts such as lemon pudding and hot chocolate fudge cakes.
She immediately realized that she was going to overcome the food language barrier.
In the United States, the meaning of the word "pudding" is different from that of Britain.
While in the UK, pudding means anything for your dessert, or especially hot baked or steamed dishes, it is only related to cold pumpkins and mice in the US.
Therefore, Tracy has to explain to the customer what a sticky toffee pudding is after the customer and needs to heat it up before you eat it.
Thankfully, she has a gospel passion for pudding.
"It's so delicious, there's something very special, it's almost magical," she said . ".
"We will still get emails from Americans who have tried it for the first time and say it's the best they 've ever eaten.
"With outdoor market sales growing through positive word-of-mouth, Tracy then started to engage with US retailers in the hope of having them store sticky toffee puddings and other products.
This brings the next obstacle that she has to overcome --
Most American food stores don't offer refrigerated space for frozen desserts like her, just the fridge section.
After a lot of persuasion, Tracy was able to get retailers to give her products some space in the aisles they chilled.
With the likes of the whole food market, her sticky toffee pudding caught the attention of the Oprah Winfrey Magazine team.
Tracy's dessert has also begun to win the American national awards, giving them further publicity.
Tracy said she is proud to run the business as efficiently as possible because there are no external investors.
Until recently, she finally replaced the basement with an office in downtown Austin, with only one office staff directly hired --her 25-year-
James, the old son in charge of online sales.
More bosses feature different business leaders from around the world every week: Tracy from the Lake District of England does all the other administrative work herself.
"It's almost a personal challenge," she said . "
"With the minimum number of people, how much sales can I increase.
She said the global financial crisis and the collapse of many other companies made her cautious.
"I entered the industry without knowing about business, but after the 2008 financial crisis, it reminded me of the need to be careful and frugal.
"The production of the company's pudding and other products is now outsourced to a bakery in Chicago with 20 employees.
Tracy said she was pleased that all of these workers were paid for living and health insurance.
The bakery now produces over 1 million desserts for sticky toffee pudding companies every year.
Tracy said she spoke to the staff of the facility almost every day and visited it four times a year.
