Stacked Enchilada for One - mexican restaurant corn side dish

Cooking only for one person can be a challenge.
This is especially true of making a nutritious meal.
But there is a dish here, which is easy to cook and delicious to eat.
It will be together in a few minutes and heated quickly in the microwave.
Most importantly, it can be made with almost any remaining meat of your choice.
Run out of the remaining roast chicken or break an extra burger pie and you can use whatever you have on hand.
Nothing?
Then make a cheese.
Add a green salad and you'll feel like you're in your favorite Mexican restaurant.
You need the following ingredients: 1/2 cup roast chicken pre-cooked chicken, cut into small pieces of 2 tortillas, cut into or tear into small pieces of 1/4 cup chopped onion, mexi-fresh or frozen1/2 cups
Mix or cheddar cheese, chop 1/2 cups of canned enchilada in one food, microwave safe plate, layered ingredients in the following order: 1)
Enlarge the spoon of about a tablespoon of sauce at the bottom of the dish and apply it to the lid; 2)
Add a layer of tortillas to cover the bottom; 3)
Put another tablespoon of sauce on the tortillas; 4)
Add half a chicken and spread it evenly; 5)
Add half chopped onions and spread them evenly; 6)
Add 1/3 cheese and apply it evenly.
Start with the tortillas and repeat the above steps to make the second layer of sauce, chicken, onion and cheese.
For the top, add the last layer of the remaining tortillas.
Use the remaining enchilada sauce and the remaining cheese on it.
Microwave heating 2-
3 minutes until enchilada is heated and the cheese melts.
Or heat at 350 degrees in the oven until about 20 minutes of temperature and bubbles.
This is freezing well too.
To re-heat, take it out of the refrigerator, unfreeze it, and then heat it as described above.
