If your only experience with Mexican food is eating a bowl of greasy cornflakes at a local bar, Rosa Cienfuegos wants to give you a lesson.
"Corn Flakes are not Mexican! ” she tells me.
"The first time I saw the cornflakes, I thought, 'What is this, 'we will never eat this in Mexico!
Cienfuegos runs a pop music company
On the first Sunday of each month, at the Mexican restaurant on Casa Latina in Sydney-both teaching Australians to receive real Mexican food and serving the existing Mexican community in Sydney.

"My dad is my hero and mentor who runs a Mexican restaurant and I work with him.
We ate at this restaurant for three years, but it was not economically feasible.
Rosa said: "Despite this, the restaurant was very much watched by the Mexican community-at the time, it was the only authentic Mexican restaurant in Sydney.
"I often cook for our customers at private events and I do this more and more after the restaurant closes.
At the end of the day, I was so busy that I thought, 'Why don't I do pop?
I have noticed that Australians are also more willing to try different South American foods and I want to open up to them as well.
Rosa has been cooking exclusively for the Mexican community in Sydney for six years, but for the past three months she has been hosting increasingly popular pop music
La Casa Latina's ups is located in an ancient detachable place in the Addison Road Market in Marrickville.
The real lack of Mexican food is caused by simple economic reasons, she said.
"In a Mexican restaurant in Sydney, there is no real Mexican food even if there is a Mexican boss.
I know-the Mexican community is small and they can't feed you!

"Cienfuegos does all the cooking by itself --
She said she did not want any help.
It's part of the Mexican tradition, she says, and can be cooked separately, or just with the other side.
"It sounds a bit crazy, but that's what we think!
She produced about 150 tamales for each event, and this alone took her two days to cook.
"Food doesn't really change much as people want the same thing, and that's what they want.
People like steamed corn powder because it is hard to find in other places.
They're my number. one seller.
There were always soft tacos and I made a soup that was very popular in winter.
Although she might add some weird desserts-like chili peppers --

"It's great to see so many people from outside the Mexican community come down to dinner.
I really hope that the Australian people can accept more authentic Mexican food.
I would love to see things like gorditas become more popular here-they are amazing.
