New York’s Fine Dining Scene Is Skewing in One Direction - what does skip the dishes charge restaurants

If you want to get a Michelin star in New York, the first thing you can do is add the word "sushi" to the name of your restaurant.
Or at least make sure you have Japanese cuisine on your menu.
On Tuesday, the Michelin Guide announced 2019 restaurants in New York City, with 17 new stars.
Six of them are Japanese.
French cuisine did a great job: there were three new entries in the box, two of which came from legendary chef Joel robaxiong, who died earlier this year.
The two newcomers are Mexican, including the exciting new Oaxacan restaurant Claro.
On the top floor, the dining scene in the city remains unchanged --
Manhattan is still home to five or three.
Star attractions: Le Bernardin, Masa, 11 Madison Park, chef's table at the Brooklyn restaurant, and itself.
If anyone is determined to visit all the restaurants in one day, it doesn't take much walking: restaurants are all gathered in midtown except for EMP in the Flatiron area (
24 Street is Midtown for some people).
This year's New York guide includes 76 star restaurants, up from 72 last year (
And a slight decrease in 77 in the 2017 guidelines).
However, one place has been closed: the Tetsu basement granted two stars has changed from an expensive meat --
Taste the restaurant, yes, a la carte sushi.
The news is too late for the printing guide.
Gwendal Poullennec, the new international director of the Michelin Guide, said there was no preference for sushi.
"There are a lot of Japanese restaurants to choose from in New York," he said . "
"This is what the customer is looking for and is doing well.
But no matter what the dishes are, our standards are the same.
Poullennec defended Babbo's existence on the list with the same reasoning (
The restaurant is co-
Mario Batali, accused of sexual harassment, owns)
The scarcity of female chefs.
"Our approach is the same as the one we use globally.
We do not have any standards or considerations other than the quality of the food.
Of the 76 star restaurants, only two have a female kitchen: Melissa rodgez of Del Posto and Emma Benson of aquavit.
And three in New York.
The scene of the star may have been dull, and there are good news and bad news in these two games --star category.
Four restaurants have been added to the list, including three new attractions: Icimura in Uku, studio in Robuchon and basement in Tetsu. The one-
The star list also has more dynamics, such as asAtomix, featuring the gorgeous ouskorean omakase menu.
Brooklyn retains nine places and two more interesting places this year, Claro and Oxomoco, a Williamsburg restaurant specializing in wood
Mexican cuisine.
In the end, AndLe Coucou is also on the list.
"It has been on our radar since it opened, and we have monitored the steady rise in the quality of dishes singing with tips," said Poullennec . ".
If Michelin doesn't like the food here, it's American cuisine.
The brilliant Gramercy Tavern can't break through-star category;
The frame is completely gone.
Within Tower pub (Minetta Tavern) and Ole, (Aureole) two big giant was included in the list.
Other serious omissions include the ecosme, the Beatrice Inn, and the Momofuku Ssam Bar, which is trapped in the bib food.
I didn't see isLilia either;
Despite being ranked first in the world, Italian food is hardly on the list.
The month restaurant, the roadside inn Francescana, is in Modena.
Poullennec defended the list for no Italian attractions.
"We have 563 restaurants in our 2019 Guide --
87 is Italian, 70 is Japanese . "
"Italian is good --represented.
"Just no stars.
