Mexican masterclass: The great Mexican breakfast - mexican restaurant refried beans side dish

Add spice to your fall with the classic dishes of the first chef, Thomasina miers. This is a delicious and simple brunch that will refresh you on the weekend.
When you wake up, put the sauce on it and let it simmer slowly when you drink coffee.

Add tarragon to the sauce and stir well.
Melt the remaining lard in a frying pan and turn the heat up until the fat hisses.
Fry eggs, Fry two at a time, scoop lard on the top of the egg so that the edge of the egg becomes golden and absorbs some flavor.
Season the eggs with salt and pepper.
Put a flat bread on each plate with tomato sauce on it.
Put a omelette on it, sprinkle with ground cheese and extra tarragon.
