Low Carb Beefed-Up Meatloaf - low carb side dishes at restaurants

Heat the oven again to 350 degrees Fahrenheit
In a small bowl, mix the toppings of tomatoes together. Set aside.
You can add a few drops of water to the consistency of the tomato sauce.
Mix beef, eggs, Parmesan cheese, vegetables, herbs and seasonings in a large bowl.
Work on a paper pan or counter lined with waxed paper, mix the Meat Loaf to 10 by 8-
Inch flat rectangle on wax paper.
Place a prosciutto slice on top, and then a provolone slice.
Roll up the meatloaf mixture like a burrito and seal the surrounding edges by pinching the meat.
Roll, seam side down, put 5 by 9-inch loaf pan.
Apply a thick layer of tomato toppings to completely cover the top of the meatloaf.
Bake in the oven for about 1 hour and 15 minutes or until the temperature on the meat thermometer reaches 165 F.
Drain fat and rest at least 10 minutes before slicing.
