Like many other traditional cultures, the tail is especially pork, so they also store beef lungs, pork blood, beef tongue and so on.
I tried pork sisig, pork adobo and bopis as they were their most popular dishes.
Adobo and sisig are lovely because the meat is tender and delicious.
The pork adobo is similar to what I used to be because the meat was stewed with vinegar and soy sauce along with garlic, onions, pepper and bay leaves.
The taste of Bopis is bolder.
