Eggplant Parmesan Supreme (and other eggplant recipes!
Eggplant Parmesan is one of my favorite dishes!
This version avoids the flour needed for most recipes for eggplant parmesan cheese, resulting in lower carbohydrates and glutenfree dish.
But the recipe for this eggplant parmesan is not bad at all! Why?
I didn't paint eggplant with flour, but eggplant with delicious parmesan cheese!
You really have to try to believe it!
The flavors of Parmesan cheese, pasta sauce and eggplant are very pleasant to mix together! Mmmmm. . . . . ! -

Step 1: Wash the eggplant and cut it into 1/4 thick slices.
Dip the sliced eggplant into the egg and put it into the ground parmesan cheese.
If necessary, press the cheese on both sides of the eggplant with the back of the spoon.
Slice egg and cheese-covered eggplant into an empty container of 3rd.
It would be nice to put the cheese covered piece in the container.
Repeat the process with the remaining eggplant slices.
Each slice should look like this.
Step 2: when all slices are covered with eggs and cheese, cover the container with a lid or plastic wrap and refrigerate for 30 minutes to 1 hour.
Step 3: Apply a 13 to grease with a 9 inch casserole and spare it.
Warm up to 350 F.
Sprinkle a little olive oil on the frying pan.
Cook eggplant with medium heat in a frying pan. .
When the cheese on the top becomes smooth and melted and the bottom becomes golden yellow, flip the jacket over and cook the second until it turns golden brown.
When each piece is cooked, place it in a lubricated casserole.
Step 4: On the first layer of eggplant, put a layer of pasta sauce and then a layer of mozzarella cheese.
When the eggplant is ready, add more eggplant on it.
Keep making eggplant, sauce and mozzarella cheese until you run out of all your eggplants.
If the top layer of the eggplant is not enough to cover the whole casserole, it doesn't matter.
Add a layer of Parmesan cheese to the top.
Bake in the oven for 35 minutes.
