The list of "Best Restaurants" is tricky, but answering these questions is the third annual list of 101 Best Restaurants in the United States.
How did we get this list? It wasn't easy.
In 2011, we made a list of our first 101 copies and gave a simple standard: Where do editors of daily meals like to eat?
Considering our mood, our budget, and where we will be when we are hungry, how we will vote --
Not our critical ability, but our mouths and our wallets?
Where will we send our friends?
We designed a list of 150 places from all over the United States and represented from the old-
Avant-garde stylegarde, ultra-Super Leisurefancy.
We classified the selection and invited an outstanding panel of judges (
Mainly restaurant critics, food and lifestyle writers and bloggers)
Through anonymous surveys, help order restaurants from all over the United States, and then count the results to list the rankings.
We repeated the process in 2012, with 2011 winners, nominees and suggestions from judges and readers in mind, and finally 202 nominations.
One Daily Meal: one daily meal at 28 of the most expensive restaurants in the United States: 50 of the most powerful people took part in 2013 of the food, but it is getting harder and harder to get 202 nominations every year
We started the list of restaurant Masters.
This is partly due to the increasing quality and variety of restaurants across the United States.
Please note that in addition to the winners and nominees of the previous two years, we have considered the reader's suggestions and discussed in detail a more impressive panel of judges that we are proud to note (

We are proud to note that this year we have considered more restaurants from different geographical areas than ever before.
The list of 303 nominees was reduced to 202 and then voted by the group and our staff, each restaurant had the opportunity to be selected three times according to the location, type of cuisine, price factors, degree of "buzz", form of cuisine and atmosphere, classic status, offering an epic dining experience.

As for 2013, chef Thomas Keller's French Laundry room ranked first in 2011, but was eliminated in 2012 and recycled some

There are 55 restaurants returned from 2012, and 46 restaurants have been on the list in the past three years.
We strive to represent a wide geographical distribution, but the fact is that there are "gourmet towns" all over the country "--

Many of the best restaurants seem to be gathered here, at least sometimes because talented chefs and restaurant owners from other regions will be attracted there.

With a population of 500,000 people and more, and while they are all packed with restaurants, can each of them have one or two places to compare to the best places offered in the US? Maybe.
But maybe not.
We all support regional pride, but the question we encourage the members of the group is (and readers)
In areas that seem to be under-represented, I want to ask myself: do I like the restaurants here that are something I would recommend people to have a special trip here to experience?
For most people, the answer to this question is yes, if not all the top
Ranked third in the 101 best restaurants, whether it's a culinary mecca or a landmark local institution that happens to do better than others.
Nevertheless, in the competition for positioning, the most prominent areas of the list did lose to a geographically more diverse group of winners in 2013.
Although the top 20 restaurants are still dominated by New York, they have dropped from 12 to 11. Overall, 28 restaurants in New York City in 2012 fell to 26 in 2013.
In the same way, California has dropped from 24 winners to 20, and Chicago has dropped to 7.
Restaurants from 22 states and Washington, D. C. C.
On 2013, there were delegates from 19-plus-D. C. in 2012.
The newcomers are Hawaii, Mississippi and Ohio;
Cities not previously represented include Honolulu, Oxford and Cleveland.

According to this year's regional breakdown, there are 39 restaurants on the east coast, 25 on the West Coast and the Pacific Ocean, 16 in the South, 13 in the southwest and 8 in the center.
The Gramercy Tavern French Laundry, Villon, jo Francl Robuchon, girls and goat straps open up in their respective areas.
In terms of cuisine, it is mainly American, standard, traditional and modern.
After a dramatic fall in 2012, French cuisine remained stable.
Asian restaurants have increased after falling last year, and Italian restaurants, which have risen third since 2011, have soared again.
Perhaps most notably, the number of pioneers
The garde restaurant on the list almost doubled.
Does this list represent an improvement in the quality and innovation of restaurants outside some major cities in the United States, or does it represent a decline in the same things in these places?
Can we finally say Italy, Asia and avant-garde?
Garde cuisine with a fork in the French dish?
It's hard to say because the French Laundry is at the top of the list.
These issues need to be discussed.
Can you expect more liquid nitrogen and Agar?
Do you have agar in your food? Probably.
Some winners will certainly provoke critics and inspire advocates.

Less controversial is the addition of the chef table at the Brooklyn gourmet restaurant, Jose Andres, nomadic, medowood, Sushi Yasuda, cat bird seating and Benu.

But hey, the list of the best restaurants is not subjective, right?
